No-Bake Chow Mein Noodle Haystack Cookies
Makes: about 24 cookies
Prep time: 15 minutes
Chill time: 15–30 minutes
Ingredients
-
11 oz (about 310 g) butterscotch baking chips
-
1 cup creamy peanut butter
-
5 cups crispy chow mein noodles
-
1 cup roasted peanuts, optional
-
Pinch of salt, optional
Instructions
-
Melt the coating:
Place the butterscotch chips and peanut butter in a microwave-safe bowl. Microwave in 20–30 second intervals, stirring well after each, until smooth. Don’t overheat. -
Add the noodles:
Gently fold the chow mein noodles into the melted mixture. Add the peanuts if using. Stir carefully until everything is evenly coated. -
Form the haystacks:
Line a baking sheet with parchment or wax paper. Drop spoonfuls of the mixture onto the sheet, shaping them into small haystack-like mounds. -
Let them set:
Refrigerate for about 15–30 minutes, or until firm. -
Serve:
Once set, transfer the cookies to an airtight container. Keep them refrigerated if your kitchen is warm.
Easy variations
-
Replace some of the peanuts with mini marshmallows.
-
Add a handful of shredded coconut.
-
Drizzle the finished haystacks with melted chocolate.
-
For a salty-sweet version, sprinkle a tiny amount of flaky sea salt over the tops before they set.
Tip: If the mixture seems too thick, add a little more peanut butter. If it’s too loose, stir in additional chow mein noodles.
