Pulled deli ham from the fridge and noticed a rainbow-like shine on the slices. Is that normal?

Yes — a rainbow-like or metallic sheen on sliced deli ham can be normal and doesn’t necessarily mean it’s spoiled.

It is often iridescence, caused when light reflects and diffracts off the tightly packed muscle fibers on the cut surface. You can see a green, blue, pink, or rainbow appearance, especially when the slices are thin or moist.

How to tell if it’s still okay

The shine by itself isn’t a reliable sign of spoilage. Check for:

  • Slimy or sticky texture

  • A strong sour, rotten, or unusual odor

  • Mold or fuzzy growth

  • Discoloration that looks different from the normal iridescent sheen

  • Packaging that’s swollen or leaking

  • Whether it has been stored beyond the package’s recommended time

If the ham looks and smells normal and has been properly refrigerated and stored within its recommended timeframe, the rainbow sheen alone is generally not a reason to throw it out.

When in doubt—especially with deli meat—don’t taste it to test whether it’s safe.
