A well known chef’s tip: “Stop adding milk or water to your mashed potatoes. This ingredient makes them creamier than at the restaurant!”

The Chef’s Trick for Extra-Creamy Mashed PotatoesThe “secret ingredient” chefs often use instead of adding lots of milk or water is butter. It gives mashed potatoes a richer, silkier texture and much more flavor.

Restaurant-style mashed potatoes

Ingredients

  • 1 kg (2.2 lb) Yukon Gold or other yellow-fleshed potatoes
  • 100–150 g (7–10 tbsp) unsalted butter
  • Salt, to taste
  • Optional: a little warm milk or cream if needed

Method

  1. Peel the potatoes and cut them into similarly sized pieces.
  2. Start them in cold, salted water, then bring to a gentle boil.
  3. Cook until completely tender when pierced with a fork.
  4. Drain thoroughly and let them steam-dry for a minute or two.
  5. Mash or rice the potatoes while they’re still hot.
  6. Add softened butter gradually, folding it in until the potatoes become smooth and glossy.
  7. Season with salt. Add a small amount of warm milk only if you want a looser consistency.

👨‍🍳 The real secret

Don’t overwork the potatoes. Blending, food-processing, or aggressively beating them can release too much starch and make them gluey. A potato ricer or masher produces a much better texture.

And if you’re wondering about the viral “one secret ingredient” claims: there are several chef variations—butter, crème fraîche, cream cheese, roasted garlic, or even olive oil—so there isn’t one universally correct restaurant secret.
