A Common Kitchen Safety Tip Many People Forget Overnight

If you mean the kitchen-safety warning behind that headline, one of the most important overnight mistakes is leaving perishable food sitting out at room temperature.

Don’t leave cooked meat, poultry, eggs, dairy, leftovers, or other perishable foods on the counter overnight. Bacteria can multiply rapidly between 40°F and 140°F (4°C–60°C), the USDA’s “danger zone.” Perishable food should generally be refrigerated within 2 hours—or within 1 hour if the temperature is above 90°F (32°C).

A few practical habits:

  • Put leftovers into the refrigerator within the recommended time.
  • Divide large amounts of food into shallow containers so they cool more quickly.
  • Don’t rely on smell or appearance to decide whether food is safe.
  • When in doubt about food that has been sitting out overnight, throw it away rather than tasting it to check.

One especially common misconception is that reheating food the next morning necessarily makes it safe. Some bacteria can produce toxins that aren’t reliably destroyed by ordinary reheating, so prevention is safer than trying to rescue food that was improperly stored.
