Slow Cooker Onion Butter Potatoes

These tender, buttery potatoes are incredibly easy to make. The onions slowly cook with the potatoes, creating a comforting side dish with plenty of flavor.

Ingredients

  • 2 lb (900 g) baby potatoes, halved if large
  • 1 medium onion, thinly sliced
  • 4 tbsp butter, melted
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried parsley or Italian seasoning
  • ½ cup chicken or vegetable broth
  • Optional: ½ cup shredded Parmesan cheese
  • Optional: fresh parsley for serving

Instructions

  1. Prepare the potatoes: Wash the potatoes well and cut larger ones in half so they cook evenly.
  2. Layer everything: Place the potatoes and sliced onion in the slow cooker.
  3. Add the flavor: Mix the melted butter, garlic, salt, pepper, and seasoning together. Pour over the potatoes and onions.
  4. Add broth: Pour the broth around the potatoes.
  5. Slow cook: Cover and cook on LOW for 4–5 hours or until the potatoes are fork-tender. Cooking times can vary depending on the size and type of potatoes.
  6. Finish: Stir gently. If using Parmesan, sprinkle it over the potatoes during the final 10–15 minutes.
  7. Serve: Garnish with fresh parsley and serve warm.
