Slow Cooker Onion Butter Potatoes
These tender, buttery potatoes are incredibly easy to make. The onions slowly cook with the potatoes, creating a comforting side dish with plenty of flavor.
Ingredients
- 2 lb (900 g) baby potatoes, halved if large
- 1 medium onion, thinly sliced
- 4 tbsp butter, melted
- 2 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried parsley or Italian seasoning
- ½ cup chicken or vegetable broth
- Optional: ½ cup shredded Parmesan cheese
- Optional: fresh parsley for serving
Instructions
- Prepare the potatoes: Wash the potatoes well and cut larger ones in half so they cook evenly.
- Layer everything: Place the potatoes and sliced onion in the slow cooker.
- Add the flavor: Mix the melted butter, garlic, salt, pepper, and seasoning together. Pour over the potatoes and onions.
- Add broth: Pour the broth around the potatoes.
- Slow cook: Cover and cook on LOW for 4–5 hours or until the potatoes are fork-tender. Cooking times can vary depending on the size and type of potatoes.
- Finish: Stir gently. If using Parmesan, sprinkle it over the potatoes during the final 10–15 minutes.
- Serve: Garnish with fresh parsley and serve warm.
