Ingredients — serves 4

1 kg potatoes, peeled and cut into chunks

4 tbsp butter

½ cup warm milk

1 tsp salt, plus more to taste

Optional: 1–2 cloves roasted or minced garlic
Instructions

Boil the potatoes: Put the potatoes in a pot and cover with cold water. Add a generous pinch of salt. Bring to a boil and cook for 15–20 minutes, until completely tender.

Drain well: Drain the potatoes and return them to the warm pot for 1–2 minutes to let excess moisture evaporate.

Mash: Add the butter and mash until smooth.

Add milk: Gradually stir in the warm milk until you reach your preferred consistency.

Season: Add salt and black pepper. Taste and adjust.

Tip: Don’t use a blender or food processor—the potatoes can become gluey. A potato masher or ricer gives much fluffier results.
