Slow Cooker Garlic Brown Sugar Pork Chops
Tender pork chops cooked slowly in a sweet, savory garlic-brown-sugar sauce.
Ingredients

4 boneless or bone-in pork chops

4 cloves garlic, minced

½ cup brown sugar

¼ cup soy sauce

¼ cup chicken broth

1 tbsp olive oil

1 tsp Dijon mustard

½ tsp smoked paprika
-
½ tsp black pepper

½ tsp salt

1 tbsp cornstarch + 2 tbsp cold water, optional for thickening
Instructions

Season the pork: Pat the pork chops dry and season lightly with salt, pepper, and smoked paprika.

Make the sauce: Whisk together brown sugar, soy sauce, chicken broth, garlic, olive oil, and Dijon mustard.

Add to slow cooker: Place the pork chops in the slow cooker and pour the sauce over them.

Cook: Cover and cook on LOW for 4–5 hours or until the pork reaches a safe internal temperature of 145°F/63°C.

Thicken the sauce: If desired, transfer the cooking liquid to a saucepan. Stir in the cornstarch slurry and simmer for 2–3 minutes until thickened.

Serve: Spoon the garlic-brown-sugar sauce over the pork chops.
Tip: Pork chops are lean and can become dry if overcooked, so start checking their temperature toward the lower end of the cooking time. Serve with mashed potatoes, rice, or roasted vegetables.
