Purslane (Portulaca oleracea) is sometimes treated as a weed, but it’s also an edible plant. Its succulent leaves contain nutrients such as vitamin C, vitamin A precursors, magnesium, potassium, and omega-3 fatty acids.
Before eating any plant that appears spontaneously in your garden, however, make sure you’ve identified it correctly. Some harmless-looking plants have poisonous look-alikes.
