Marinated Cucumbers, Onions & Tomatoes

A simple, old-fashioned side dish that’s crisp, tangy, and refreshing.

Ingredients
2 large cucumbers, thinly sliced
2–3 ripe tomatoes, cut into wedges or chunks
½ medium onion, thinly sliced
¼ cup apple cider vinegar or white vinegar
2 tablespoons olive oil
1 tablespoon sugar or honey
½ teaspoon salt
¼ teaspoon black pepper
1 teaspoon dried dill, or 1 tablespoon fresh dill
Optional: 1 small clove garlic, minced
Directions
Place the cucumbers, tomatoes, and onions in a large bowl.
Whisk together the vinegar, olive oil, sugar, salt, pepper, and dill.
Pour the dressing over the vegetables and gently toss.
Cover and refrigerate for at least 1 hour. For deeper flavor, let it marinate for 2–4 hours.
Give it another gentle toss before serving.

Tip: If you want extra-crisp cucumbers, lightly salt them first, let them sit for 15–20 minutes, and drain off the excess liquid before adding the marinade.

It keeps well in the refrigerator for about 2 days, although the tomatoes and cucumbers will become softer as they sit.
