π² Hamburger Vegetable Soup
A hearty, comforting soup made with ground beef, vegetables, tomatoes, and savory broth. Itβs an easy one-pot meal and works especially well on a cold day.
Ingredients
- 1 lb (450 g) lean ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, diced
- 2 potatoes, peeled and cubed
- 1 cup green beans, chopped
- 1 can (14β15 oz) diced tomatoes
- 4 cups beef broth
- 1 cup corn, fresh or frozen
- 1β2 tbsp tomato paste
- 1 tsp Italian seasoning
- Β½ tsp paprika
- Salt and black pepper, to taste
- 1 tbsp olive oil, if needed
Directions
- Brown the beef: Heat a large pot over medium-high heat. Add the ground beef and cook until browned, breaking it into small pieces. Drain excess fat if necessary.
- Add aromatics: Add onion and garlic and cook for about 2β3 minutes.
- Add vegetables: Stir in carrots, celery, potatoes, and green beans.
- Add liquids: Pour in the diced tomatoes and beef broth. Stir in the tomato paste and seasonings.
- Simmer: Bring to a boil, then reduce heat and cover. Simmer for 20β25 minutes, or until the potatoes and carrots are tender.
- Finish: Add the corn during the last 5 minutes. Taste and adjust salt and pepper.
- Serve: Ladle into bowls and serve hot. π₯£
Tip: For a lighter version, use lean ground beef and add extra vegetables. For more flavor, a splash of Worcestershire sauce works beautifully.
