🍲 Hamburger Vegetable Soup

A hearty, comforting soup made with ground beef, vegetables, tomatoes, and savory broth. It’s an easy one-pot meal and works especially well on a cold day.

Ingredients

  • 1 lb (450 g) lean ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 2 potatoes, peeled and cubed
  • 1 cup green beans, chopped
  • 1 can (14–15 oz) diced tomatoes
  • 4 cups beef broth
  • 1 cup corn, fresh or frozen
  • 1–2 tbsp tomato paste
  • 1 tsp Italian seasoning
  • Β½ tsp paprika
  • Salt and black pepper, to taste
  • 1 tbsp olive oil, if needed

Directions

  1. Brown the beef: Heat a large pot over medium-high heat. Add the ground beef and cook until browned, breaking it into small pieces. Drain excess fat if necessary.
  2. Add aromatics: Add onion and garlic and cook for about 2–3 minutes.
  3. Add vegetables: Stir in carrots, celery, potatoes, and green beans.
  4. Add liquids: Pour in the diced tomatoes and beef broth. Stir in the tomato paste and seasonings.
  5. Simmer: Bring to a boil, then reduce heat and cover. Simmer for 20–25 minutes, or until the potatoes and carrots are tender.
  6. Finish: Add the corn during the last 5 minutes. Taste and adjust salt and pepper.
  7. Serve: Ladle into bowls and serve hot. πŸ₯£

Tip: For a lighter version, use lean ground beef and add extra vegetables. For more flavor, a splash of Worcestershire sauce works beautifully.
