Is There Anyone Who Actually Likes Olives? Why These Little Fruits Have So Many Fans

Absolutely—olives have a surprisingly devoted fan base, and there are good reasons for it. Their strong flavor can

be polarizing, but people who enjoy them often really love them.

Why do people like olives?

  • They’re intensely savory. Olives contain compounds that create a strong umami-like, salty and savory experience.
  • They have a distinctive bitterness. Fresh olives are naturally very bitter because of compounds such as oleuropein. Curing removes much of that bitterness while leaving a characteristic flavor.
  • Salt and acidity make them addictive to some palates. Brining, fermentation, vinegar, and other curing methods give olives a combination of salty, tangy, sour, and savory flavors.
  • Texture matters. Depending on the variety and preparation, olives can be firm and meaty, soft and buttery, or slightly chewy.
  • There are many varieties. Kalamata, green Manzanilla, black ripe olives, Castelvetrano, Cerignola, and many others taste quite different.
  • They work well with other foods. Olives add contrast to pizza, salads, pasta, sandwiches, cheese, roasted vegetables, chicken, and Mediterranean-style dishes.

Are olives actually healthy?

In reasonable portions, yes. Olives provide mostly monounsaturated fat, along with vitamin E and various antioxidant compounds. Olive oil—made from olives—is a major component of Mediterranean dietary patterns.

The main thing to watch is sodium, particularly with brined or cured olives. People who need to limit sodium may want to choose lower-sodium varieties or rinse them before eating.

Why do some people hate them?

Olive dislike is perfectly normal. Their bitterness, saltiness, acidity, and distinctive aroma can be overwhelming if you’re not accustomed to them. Food preferences are influenced by both biology and repeated exposure, so someone who initially dislikes olives may eventually develop a taste for them.

And there’s no requirement to acquire that taste—olives are one of those foods where “love them or hate them” is practically part of the experience. 🫒
