  1. Start with fresh corn. Look for bright green husks, moist silk, and firm ears. Freshness matters because corn’s natural sugars gradually convert to starch after harvest.
  2. Don’t over-peel it. You can grill corn directly on the grates, with the husks removed, for more pronounced char.
  3. Try grilling in the husk. Pull the husk back, remove the silk, then pull the husk back over the corn. Soaking isn’t essential, but a damp husk can provide some protection from intense heat.
