🥒 Marinated Cucumbers, Onions & Tomatoes
A simple, refreshing salad that’s especially good alongside grilled meat, rice, or sandwiches.
Ingredients
- 2 large cucumbers, sliced
- 2–3 tomatoes, chopped
- 1 small red or white onion, thinly sliced
- 3 tbsp olive oil
- 2 tbsp vinegar — white, apple-cider, or red-wine
- 1 tsp sugar or honey, optional
- ½ tsp salt, or to taste
- ¼ tsp black pepper
- 1 tbsp fresh parsley or cilantro, chopped
- Optional: a little garlic, dill, or chili flakes
Directions
- Prepare the vegetables: Slice the cucumbers and onion and chop the tomatoes.
- Make the marinade: Whisk together olive oil, vinegar, salt, pepper, and sugar/honey.
- Combine: Put the vegetables in a bowl and pour the marinade over them.
- Toss gently so everything is coated.
- Refrigerate for 30–60 minutes before serving. For a stronger flavor, marinate for several hours.
- Toss again before serving and add fresh herbs.
💡 Tip for crisp cucumbers
If you want the salad less watery, lightly salt the sliced cucumbers and let them sit for 10–15 minutes, then drain and pat dry before adding the marinade.
Best eaten within 1–2 days and kept refrigerated.
