Southern 4-Ingredient Cucumber Sandwiches

Classic Southern cucumber sandwiches are the ultimate crowd-pleaser for teas, baby showers, or warm afternoon gatherings. They are cool, creamy, and wonderfully refreshing.

Here is how to make the traditional, crowd-favorite version with just 4 simple ingredients:

Ingredients

  • 1 loaf White sandwich bread (soft, sliced thin with crusts trimmed off)

  • 1 English cucumber (peeled, sliced paper-thin)

  • ½ cup Cream cheese (softened to room temperature)

  • ¼ cup Mayonnaise (use a good Southern brand like Duke’s for the best flavor)

  • (Optional 5th bonus touch: A light pinch of salt, pepper, or fresh dill, but the classic 4 shine on their own!)

Step-by-Step Instructions

  1. Prep the Cucumbers: Slice your peeled cucumber as thin as possible. Place the slices on a paper towel and sprinkle them lightly with salt. Let them sit for 10 minutes, then pat them completely dry with another paper towel to prevent soggy sandwiches.

  2. Mix the Spread: In a small mixing bowl, thoroughly combine the softened cream cheese and mayonnaise until smooth and creamy.

  3. Assemble: Lay out your bread slices. Generously spread the cream cheese-mayo mixture onto both sides of the bread (this creates a moisture barrier so the bread doesn’t get soggy).

  4. Layer and Cut: Arrange the dried cucumber slices neatly in a single layer on half of the bread slices. Top with the remaining bread, press down gently, and cut the sandwiches diagonally into triangles or into neat rectangles.

Tip: If you are making these ahead of time for a party, cover the assembled sandwiches with a damp paper towel and wrap them tightly in plastic wrap. They can be stored in the fridge for a few hours without drying out!

Are you planning a party or tea gathering, or are you just craving a nice, refreshing snack?
