Pulled deli ham from the fridge and noticed a rainbow-like shine on the slices. Is that normal?

🌈 Rainbow Shine on Deli Ham: Is It Normal?

Usually, yes. A rainbow-like or metallic sheen on sliced deli ham is often caused by light reflecting from the muscle fibers and fat. It’s called iridescence and can happen even when the ham is perfectly safe to eat.

The appearance alone doesn’t mean the ham has spoiled.

Check for other signs of spoilage

Throw the ham away if you notice:

Strong sour, rotten, or unusual odor
Slimy or sticky texture rather than simply moist
Mold or fuzzy growth
Significant discoloration that isn’t just the normal iridescent sheen
Packaging that is bloated or leaking

Also follow the package’s use-by date and storage instructions. Once opened, deli meat generally shouldn’t be kept indefinitely, even if it looks normal.

Bottom line: A clean, rainbow/greenish metallic reflection on otherwise normal-looking ham is commonly harmless. If you’re unsure, especially if there’s an unusual smell or sliminess, it’s safer to discard it.
