Ingredients

  • 6 bone-in or boneless chicken thighs
  • 3 large onions, thinly sliced

  • 1 tsp paprika
  • ½ tsp dried thyme
  • Salt and black pepper
  • 1 tbsp flour (optional, for thickening)

Method

  1. Season the chicken: Pat the thighs dry and season generously with salt, pepper, paprika, and thyme.
  2. Brown the chicken: Heat oil in a large skillet over medium-high heat. Sear the thighs for about 4–5 minutes per side until nicely browned. Remove and set aside.
  3. Caramelize the onions: Lower the heat to medium. Add the sliced onions with a pinch of salt. Cook for 15–25 minutes, stirring occasionally, until soft, golden-brown, and caramelized. Add the garlic during the final minute.
  4. Build the sauce: Sprinkle in the flour if using and stir for 30 seconds. Slowly add the chicken broth, scraping up the browned bits from the pan. Add Worcestershire sauce if desired.
  5. Smother the chicken: Return the chicken and its juices to the skillet. Spoon the onions over the thighs, cover, and simmer gently for 15–20 minutes, or until the chicken reaches 165°F/74°C internally.
  6. Finish: Taste and adjust the salt and pepper. Let the chicken rest for a few minutes before serving.

Serve over mashed potatoes, rice, noodles, or crusty bread so you can soak up the onion gravy.
