Here’s a crispy, savory version that makes roasted cauliflower seriously addictive:

🥦 Crispy Roasted Cauliflower

Crispy on the edges, tender in the middle, and packed with savory flavor—this roasted cauliflower is so good you might forget you’re eating vegetables!

Ingredients

  • 1 large head cauliflower

  • 3 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • ½ teaspoon onion powder

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ½ teaspoon dried Italian herbs or oregano

  • 2 tablespoons grated Parmesan, optional

  • 1 tablespoon lemon juice, for finishing

  • Fresh parsley, optional

Instructions

  1. Heat the oven to 220°C (425°F). For extra crispiness, place the baking sheet in the oven while it preheats.

  2. Prepare the cauliflower. Cut it into bite-sized florets and pat them dry. Removing excess moisture helps them brown instead of steam.

  3. Season. Put the florets in a large bowl. Add olive oil, garlic powder, paprika, onion powder, salt, pepper, and herbs. Toss thoroughly so every piece is lightly coated.

  4. Spread it out. Carefully transfer the cauliflower to the hot baking sheet. Arrange the pieces in a single layer, leaving some space between them. Crowding the pan will make them softer.

  5. Roast for approximately 25–35 minutes, turning the florets once halfway through. Roast until the edges are deeply golden and crispy.

  6. Add Parmesan, if using, during the final 3–5 minutes of roasting.

  7. Finish with lemon juice and a sprinkle of fresh parsley before serving.

🔥 Extra-crispy tips

  • Cut some florets with flat sides and place those sides directly against the baking sheet.

  • Make sure the cauliflower is very dry before seasoning.

  • Don’t overcrowd the pan.

  • For even more browning, place the tray under the broiler/grill for 1–2 minutes at the end—but watch it closely.

Serve immediately as a side dish, snack, or filling for wraps and bowls.

Flavor upgrade: Add a pinch of chili flakes for heat or drizzle the finished cauliflower with tahini-lemon sauce for a creamy contrast.
