Absolutely—a lot of people genuinely love olives. 😄 In fact, olives have a surprisingly devoted fan base.
The reason they can seem so polarizing is that their flavor is unusual:
🫒 Briny and salty: Olives are cured in saltwater or brine, giving them that intense savory flavor.
🫒 Bitterness: Fresh olives are naturally extremely bitter because of compounds such as oleuropein. Curing removes much of that bitterness and develops their characteristic taste.
🫒 Umami: Fermentation and curing create savory, complex flavors that people often find addictive.
🫒 Texture: Some varieties are firm and meaty; others are soft and buttery.
🫒 Acquired taste: If you grow up eating olives, their salty, fermented flavor can become very familiar and appealing.
And there are many different kinds—Kalamata, Castelvetrano, Manzanilla, Cerignola, Niçoise, green, black, cracked, stuffed, etc. Someone who hates one variety may absolutely love another.
Interestingly, green and black olives aren’t necessarily different species. They’re often the same fruit harvested at different stages of ripeness and processed differently.
So yes: olive lovers aren’t pretending. They really do taste something delicious in those little salty fruits. 😅
