Homemade Turtle Candy With Pecans and Caramel 🍫🐢

These homemade turtle candies combine toasted pecans, chewy caramel, and melted chocolate. They’re easy to make and perfect for gifting or a sweet treat.

Ingredients

  • 2 cups pecan halves

  • 1 cup soft caramel candies, unwrapped

  • 2 tablespoons heavy cream or milk

  • 1½ cups chocolate chips or chopped chocolate

  • 1 teaspoon vanilla extract

  • Pinch of salt

  • Flaky sea salt, optional

Instructions

  1. Toast the pecans
    Heat the oven to 350°F (175°C). Spread pecans on a baking sheet and toast for about 7–10 minutes, until fragrant. Let them cool.

  2. Make the pecan clusters
    Arrange 4–5 pecan halves together on a parchment-lined baking sheet, leaving space between each cluster.

  3. Melt the caramel
    Put the caramel candies and cream in a microwave-safe bowl. Microwave in 20–30-second intervals, stirring between each, until smooth. Stir in the vanilla and a pinch of salt.

  4. Add the caramel
    Spoon a small amount of warm caramel over the center of each pecan cluster. Allow it to settle for a few minutes.

  5. Melt the chocolate
    Melt the chocolate gently in the microwave in short intervals, stirring frequently, or use a double boiler.

  6. Cover with chocolate
    Spoon melted chocolate over each caramel-and-pecan cluster.

  7. Finish and set
    Sprinkle with a little flaky sea salt if desired. Refrigerate for 20–30 minutes, or until the chocolate is firm.

Tips for the best turtles

  • Toasting the pecans makes a big difference in flavor.

  • Don’t overheat the caramel or chocolate; gentle heating keeps them smooth.

  • For softer caramel, add a little more cream.

  • Store the finished candies in an airtight container at room temperature for several days or refrigerate for longer storage.

Shortcut: You can use pre-made soft caramel sauce instead of melting individual caramels, but choose a thick sauce so it doesn’t run off the pecans.
