Doctors Reveal What Eating Beets Can Do to Your Body

Beets are a nutrient-rich vegetable, but claims that eating them can “cure” disease or dramatically transform your health are exaggerated. For most people, beets can be a healthy addition to a balanced diet. 

1. They may support healthy blood pressure

Beets are naturally rich in dietary nitrates. Your body can convert these compounds into nitric oxide, which helps blood vessels relax and widen. Research suggests beetroot may provide a modest blood-pressure benefit in some people. 

2. They provide plenty of fiber

Fiber helps support normal digestion and can contribute to healthy cholesterol and blood-sugar levels. A half cup of cooked beets provides about 1.7 grams of fiber. 

3. They contain useful vitamins and minerals

Beets provide folate, potassium, magnesium, vitamin C, and other plant compounds. Their red color comes largely from betalain pigments, which have antioxidant properties. 

4. They may help exercise performance

The nitrates in beets have been studied for their potential to improve blood flow and exercise efficiency, particularly during endurance activities. 

5. Your urine may turn pink or red

Don’t panic if this happens after eating beets. Beeturia is a harmless temporary discoloration caused by beet pigments and can make urine or stool appear pink or red. 

Who should be cautious?

People with a history of certain kidney stones may need to limit beets because they contain oxalates. Also, people with low blood pressure or those taking blood-pressure medication should discuss regularly consuming large amounts of beet juice with their healthcare professional because the nitrate-related blood-pressure effect could add to medication effects.
