🥒 Marinated Cucumbers, Onions, and Tomatoes
A refreshing, crunchy side dish with a tangy homemade dressing. It’s easy to make and tastes even better after chilling.
Ingredients
2 large cucumbers, thinly sliced
3 medium tomatoes, chopped
1 small red or yellow onion, thinly sliced
¼ cup apple cider vinegar or white vinegar
2 tablespoons olive oil
1 teaspoon sugar or honey, optional
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon dried dill, optional
1 tablespoon fresh parsley or dill, chopped, optional
Instructions
Prepare the vegetables: Slice the cucumbers and onion and chop the tomatoes. Add everything to a large bowl.
Make the marinade: Whisk together the vinegar, olive oil, sugar or honey, salt, pepper, and dill.
Combine: Pour the dressing over the vegetables and gently toss.
Chill: Cover and refrigerate for at least 30 minutes. For stronger flavor, let it marinate for 1–2 hours.
Serve: Toss once more before serving and adjust the seasoning to taste.
💡 Tips
For extra-crisp cucumbers, use English cucumbers or remove some of the seeds.
If you’re making it ahead, add the tomatoes closer to serving time to keep them from becoming too soft.
For a stronger Mediterranean flavor, add feta cheese and oregano.
Keep leftovers refrigerated and use them promptly because the vegetables release liquid as they sit.
