The Ultimate Fuss-Free Mini Meatloaf Muffins With a Hearty Vegetarian Option

When you want the comforting flavors of meatloaf without waiting nearly an hour for a traditional loaf to bake, mini meatloaf muffins are an easy answer. Baking the mixture in a muffin tin creates individual portions with plenty of flavorful browned edges, and recipes commonly take around 25–30 minutes in the oven.

Classic Mini Meatloaf Muffins

Ingredients

  • 1 lb (450 g) ground beef or ground turkey
  • 1 small onion, finely diced
  • 1 small carrot, finely grated
  • 1 garlic clove, minced
  • ½ cup breadcrumbs
  • 1 large egg
  • 2 tbsp milk
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • ⅓ cup ketchup, divided
  • 1 tbsp brown sugar

Instructions

  1. Heat the oven to 350°F (175°C). Lightly grease a 12-cup muffin tin.
  2. Combine the meat, onion, carrot, garlic, breadcrumbs, egg, milk, Worcestershire sauce, herbs, salt, and pepper in a bowl.
  3. Mix just until everything is combined. Avoid overworking the meat, which can make the finished meatloaf dense.
  4. Divide the mixture among the muffin cups, gently pressing it into each one.
  5. Mix the ketchup with the brown sugar and spoon a little over each mini meatloaf.
  6. Bake for about 25–30 minutes, checking for doneness with a food thermometer. Ground beef should reach at least 160°F (71°C); ground poultry should reach 165°F (74°C).
  7. Let the muffins rest for about 5 minutes before removing them from the pan.

Hearty Vegetarian Version

For a meat-free alternative, lentils, mushrooms, oats or breadcrumbs, vegetables, and a flax-based binder can create a surprisingly hearty texture. Several established recipes use lentils as the foundation for vegetarian or vegan mini meatloaves.

Ingredients

  • 1½ cups cooked brown or green lentils
  • 1 cup finely chopped mushrooms
  • ½ small onion, finely diced
  • 1 garlic clove, minced
  • ¾ cup quick-cooking oats
  • ½ cup breadcrumbs
  • 2 tbsp ground flaxseed mixed with 5 tbsp water
  • 2 tbsp tomato paste
  • 1 tbsp soy sauce or tamari
  • 1 tsp smoked paprika
  • ½ tsp dried thyme
  • ½ tsp black pepper
  • ¼ cup ketchup or barbecue sauce

Instructions

  1. Heat the oven to 350°F (175°C) and grease a muffin tin.
  2. Let the flaxseed-and-water mixture stand for about 5 minutes until thickened.
  3. Sauté the mushrooms and onion until softened, then add the garlic for the final minute.
  4. Mash the lentils coarsely, leaving some texture rather than turning them into a smooth paste.
  5. Stir together the lentils, vegetables, oats, breadcrumbs, flax mixture, tomato paste, soy sauce, and seasonings.
  6. Divide the mixture among 8–10 muffin cups and press gently into place.
  7. Spread ketchup or barbecue sauce over the tops.
  8. Bake for approximately 25–30 minutes, then allow them to cool for several minutes before removing.

The vegetarian version can also be made ahead and frozen; lentil-based mini meatloaves are particularly well suited to meal prep.

Why the Muffin-Tin Method Works

The smaller portions cook considerably faster than a conventional meatloaf and make serving simple. The extra surface area also gives each portion more browned edges and glaze.

Serve them with mashed potatoes and green beans for a classic comfort-food dinner, or pair them with a simple salad for a lighter meal.
