Homemade Turtle Candy With Pecans and Caramel 🍫🐢
These homemade turtle candies combine toasted pecans, chewy caramel, and melted chocolate. They’re easy to make and perfect for gifting or a sweet treat.
Ingredients
-
2 cups pecan halves
-
1 cup soft caramel candies, unwrapped
-
2 tablespoons heavy cream or milk
-
1½ cups chocolate chips or chopped chocolate
-
1 teaspoon vanilla extract
-
Pinch of salt
-
Flaky sea salt, optional
Instructions
-
Toast the pecans
Heat the oven to 350°F (175°C). Spread pecans on a baking sheet and toast for about 7–10 minutes, until fragrant. Let them cool. -
Make the pecan clusters
Arrange 4–5 pecan halves together on a parchment-lined baking sheet, leaving space between each cluster. -
Melt the caramel
Put the caramel candies and cream in a microwave-safe bowl. Microwave in 20–30-second intervals, stirring between each, until smooth. Stir in the vanilla and a pinch of salt. -
Add the caramel
Spoon a small amount of warm caramel over the center of each pecan cluster. Allow it to settle for a few minutes. -
Melt the chocolate
Melt the chocolate gently in the microwave in short intervals, stirring frequently, or use a double boiler. -
Cover with chocolate
Spoon melted chocolate over each caramel-and-pecan cluster. -
Finish and set
Sprinkle with a little flaky sea salt if desired. Refrigerate for 20–30 minutes, or until the chocolate is firm.
Tips for the best turtles
-
Toasting the pecans makes a big difference in flavor.
-
Don’t overheat the caramel or chocolate; gentle heating keeps them smooth.
-
For softer caramel, add a little more cream.
-
Store the finished candies in an airtight container at room temperature for several days or refrigerate for longer storage.
Shortcut: You can use pre-made soft caramel sauce instead of melting individual caramels, but choose a thick sauce so it doesn’t run off the pecans.
