Pulled deli ham from the fridge and noticed a rainbow-like shine on the slices. Is that normal?

Yes—a rainbow-like or iridescent shine on sliced deli ham can be normal and doesn’t necessarily mean the ham is spoiled.

Why does it look rainbow-colored?

When ham is sliced, the muscle fibers can reflect light in different directions, producing a metallic, rainbow-like sheen. This is called iridescence and can occur even when the meat is perfectly safe.

How to tell if it’s actually spoiled

Don’t rely on the rainbow appearance alone. Check for:

  • Strong sour, rotten, or unusual odor

  • Slimy or sticky surface

  • Green, gray, or unusually dark discoloration

  • Mold

  • Packaging that is swollen or leaking

  • Ham that has been stored too long or improperly refrigerated

If the ham smells normal, isn’t slimy, and has been kept properly refrigerated, the rainbow sheen by itself is generally not a reason to throw it away.

If you’re unsure how long it has been in your refrigerator, when in doubt, throw it out—especially with ready-to-eat deli meat.
