Slow-Cooker Cabbage and Potatoes

A simple, hearty side dish with tender cabbage, buttery potatoes, and savory seasoning.

Ingredients

  • 1 medium head green cabbage, chopped

  • 1½ lb (680 g) potatoes, peeled and cut into chunks

  • 1 medium onion, sliced

  • 3 cloves garlic, minced

  • 2 cups vegetable or chicken broth

  • 2 tbsp butter or olive oil

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp paprika

  • ½ tsp dried thyme

  • 1 bay leaf

Instructions

  1. Add the potatoes, cabbage, onion, and garlic to the slow cooker.

  2. Pour in the broth and add the butter, salt, pepper, paprika, thyme, and bay leaf.

  3. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the potatoes are fork-tender.

  4. Remove the bay leaf. Taste and adjust the salt and pepper.

  5. Serve hot, with an extra little pat of butter if desired.

Optional: Add sliced smoked sausage, beef sausage, or cooked bacon for a more substantial meal.
