🍫 Easy Chocolate Éclair Dessert
A classic no-bake dessert made with graham crackers, creamy vanilla pudding, whipped topping, and chocolate frosting. The crackers soften as it chills, giving the dessert a cake-like texture. (Food.com)
Ingredients
- 2 packages (3–3.4 oz each) instant vanilla or French vanilla pudding
- 3 cups cold milk
- 1 container (8 oz) whipped topping, thawed
- 1 box graham crackers
- 1 container (about 15–16 oz) chocolate frosting
👩🍳 Instructions
- Make the filling: Whisk the pudding mixes with the cold milk for about 2 minutes, until thickened.
- Add whipped topping: Gently fold it into the pudding mixture.
- First layer: Arrange graham crackers across the bottom of a 9×13-inch baking dish.
- Spread half of the pudding mixture over the crackers.
- Add a second layer of graham crackers.
- Spread the remaining pudding mixture over the crackers.
- Finish with a third layer of graham crackers.
- Add chocolate frosting: Remove the foil seal from the frosting container and warm it very briefly—just enough to make it spreadable. Spread over the top.
- Refrigerate: Cover and chill for at least 8 hours, preferably overnight. This is the secret to getting soft, cake-like layers. (Shugary Sweets)
- Slice and serve cold.
⭐ Best tip
Don’t rush the chilling time. Overnight refrigeration allows the graham crackers to absorb moisture from the pudding and become soft and tender. (Food.com)
Optional: For a richer version, replace the prepared frosting with homemade chocolate ganache. A current variation uses semisweet chocolate and heavy cream. (walkingonsunshinerecipes.com)
