Ingredients
6 bone-in, skin-on chicken thighs
3 large yellow onions, thinly sliced
3 tbsp olive oil, divided
3 cloves garlic, minced
1 tsp paprika
1 tsp dried thyme
½ tsp dried rosemary
1 tsp salt, divided
½ tsp black pepper
1 tbsp brown sugar
1 tbsp balsamic vinegar
½ cup chicken broth
1 tbsp butter
Fresh parsley, for garnish
Instructions

Preheat the oven to 400°F (200°C).

Season the chicken.
Pat the thighs dry. Rub them with 1 tbsp olive oil, paprika, thyme, rosemary, ½ tsp salt, and black pepper.

Caramelize the onions.
Heat 2 tbsp olive oil and the butter in a large oven-safe skillet over medium-low heat. Add the sliced onions and remaining salt. Cook for 20–25 minutes, stirring occasionally, until deeply golden and soft.

Add garlic and flavor.
Stir in the garlic and cook for about 30 seconds. Add the brown sugar and balsamic vinegar and cook for another 1–2 minutes.

Add the broth.
Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet.

Add the chicken.
Nestle the seasoned thighs skin-side up into the caramelized onions.

Bake uncovered for about 30–35 minutes, or until the thickest part of the chicken reaches at least 165°F (74°C). For especially tender thighs, you can cook them somewhat longer; dark meat generally becomes more tender as it cooks.

Rest and serve.
Let the chicken rest for 5 minutes. Spoon the sweet, savory onions and pan juices over the chicken and garnish with fresh parsley.
