4 thick-cut, bone-in pork chops

1/3 cup brown sugar

1/4 cup soy sauce

2 tbsp ketchup

1 tbsp honey

1 tbsp apple cider vinegar

2 cloves garlic, minced

1 tsp grated fresh ginger

1/2 tsp black pepper

1/2 tsp smoked paprika

1 tbsp cornstarch

2 tbsp cold water

Season the pork: Pat the chops dry and season lightly with black pepper and smoked paprika. Go easy on salt because the soy sauce is salty.

Optional—but highly recommended: Heat the olive oil in a skillet over medium-high heat. Sear the pork chops for about 2 minutes per side, until nicely browned. Transfer them to the slow cooker.

Make the glaze: Whisk together the brown sugar, soy sauce, ketchup, honey, vinegar, garlic, and ginger.

Slow cook: Pour the glaze over the pork. Cover and cook on LOW for about 3–4 hours, until the pork reaches a safe internal temperature of 145°F/63°C, followed by a 3-minute rest.

Thicken the sauce: Remove the pork. Pour the cooking liquid into a small saucepan. Mix the cornstarch with cold water, whisk it into the liquid, and simmer for 2–3 minutes, until glossy and thick.
