Garlic Butter Bacon Roasted Cabbage Steaks
This recipe transforms simple cabbage into a rich, savory, and satisfying side dish or low-carb main. Roasting caramelizes the edges of the cabbage, while the garlic butter and crispy bacon take the flavor to the next level.

1 head of green cabbage, sliced into 1-inch thick rounds

4–6 slices of bacon, diced

3 tablespoons unsalted butter, melted

3 cloves garlic, minced

1 tablespoon olive oil (for brushing)

1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)

Salt and freshly cracked black pepper, to taste

1/4 cup freshly grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Prep the Oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper or aluminum foil for easy cleanup.

Crisp the Bacon: In a small skillet, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside on a paper towel, reserving the bacon grease.

Cut the Cabbage: Remove any outer damaged leaves from the cabbage head. Slice the head vertically through the core into 1-inch thick “steaks.”

Season the Steaks: Arrange the cabbage steaks in a single layer on the prepared baking sheet. Brush both sides lightly with olive oil and season generously with salt and pepper.

Make the Garlic Butter: In a small bowl, mix together the melted butter, minced garlic, and thyme. Brush about half of this mixture directly over the top of the cabbage steaks.

Roast: Place in the oven and roast for 20 to 25 minutes. Carefully flip the steaks, brush with the remaining garlic butter mixture, and roast for another 15 to 20 minutes, or until the cabbage is tender in the center and the edges are nicely caramelized.

Garnish and Serve: Remove from the oven, sprinkle the crispy bacon bits and Parmesan cheese (if using) evenly over the top. Garnish with fresh chopped parsley and serve warm.
Tip: Make sure your knife is sharp when cutting the steaks so the cabbage holds its shape while roasting!
