Slow-Cooker Glazed Bone-In Pork Chops

Ingredients

  • 4 thick-cut, bone-in pork chops

  • 1/3 cup brown sugar

  • 1/4 cup soy sauce

  • 2 tbsp ketchup

  • 1 tbsp honey

  • 1 tbsp apple cider vinegar

  • 2 cloves garlic, minced

  • 1 tsp grated fresh ginger

  • 1/2 tsp black pepper

  • 1/2 tsp smoked paprika

  • 1 tbsp cornstarch

  • 2 tbsp cold water

  • 1 tbsp olive oil

Instructions

  1. Season the pork: Pat the chops dry and season lightly with black pepper and smoked paprika. Go easy on salt because the soy sauce is salty.

  2. Optional—but highly recommended: Heat the olive oil in a skillet over medium-high heat. Sear the pork chops for about 2 minutes per side, until nicely browned. Transfer them to the slow cooker.

  3. Make the glaze: Whisk together the brown sugar, soy sauce, ketchup, honey, vinegar, garlic, and ginger.

  4. Slow cook: Pour the glaze over the pork. Cover and cook on LOW for about 3–4 hours, until the pork reaches a safe internal temperature of 145°F/63°C, followed by a 3-minute rest.

  5. Thicken the sauce: Remove the pork. Pour the cooking liquid into a small saucepan. Mix the cornstarch with cold water, whisk it into the liquid, and simmer for 2–3 minutes, until glossy and thick.

  6. Finish: Spoon the dark glaze generously over the pork chops
