Ingredients
For the chicken
-
1½ lb (680 g) boneless, skinless chicken thighs or breasts
-
1 tbsp cooking oil
-
½ tsp salt
-
½ tsp black pepper
For the teriyaki sauce
-
½ cup soy sauce
-
¼ cup honey or brown sugar
-
¼ cup water
-
1 tbsp rice vinegar
-
1 tsp grated fresh ginger
-
2 cloves garlic, minced
-
1 tbsp cornstarch
-
2 tbsp cold water
For serving
-
Cooked white or brown rice
-
Sliced green onions
-
Sesame seeds
Instructions
-
Make the sauce: Whisk together soy sauce, honey, ¼ cup water, rice vinegar, ginger, and garlic.
-
Prepare the chicken: Cut the chicken into bite-size pieces and season lightly with salt and pepper.
-
Cook: Heat oil in a large skillet over medium-high heat. Add chicken and cook for about 6–8 minutes, turning occasionally, until browned and cooked through.
-
Add sauce: Pour the teriyaki mixture into the skillet. Bring it to a gentle simmer.
-
Thicken: Mix cornstarch with 2 tbsp cold water. Stir it into the skillet and cook for 1–2 minutes, until the sauce becomes glossy and thick.
-
Serve: Spoon the chicken and sauce over rice. Garnish with green onions and sesame seeds.
Tip: Chicken thighs stay especially juicy, while chicken breast works well if you prefer a leaner option. Add steamed broccoli, carrots, or bell peppers for a complete meal.
