Want mashed potatoes that are creamy, fluffy, and full of flavor? The secret isn’t necessarily adding lots of milk or water.

Try This Instead

Use butter and warm dairy.

After boiling your potatoes, drain them thoroughly and let them sit for a minute or two so excess moisture can evaporate.

Then:

  1. Mash the potatoes while they’re still hot.
  2. Add plenty of softened butter.
  3. Slowly mix in a small amount of warm milk or cream if needed.
  4. Season with salt and pepper.
  5. Stop mixing as soon as the potatoes are smooth and fluffy.

Why Avoid Cold Liquid?

Adding cold milk can cool the potatoes and make them less creamy. Adding too much water can also dilute the flavor.

And don’t overwork the potatoes—mixing them too aggressively can release excess starch and make them gluey or gummy.
