Cassava: The Truth Behind the “World’s Deadliest Food”

Calling cassava “the world’s deadliest food” is sensationalized. Cassava is a major staple food for hundreds of millions of people and can be nutritious when properly prepared. The real issue is that raw or inadequately processed cassava can contain cyanogenic compounds that can release hydrogen cyanide.

Why can cassava be dangerous?

Cassava naturally contains cyanogenic glycosides, primarily linamarin. When cassava tissue is damaged or digested, these compounds can release cyanide.

The amount varies considerably between varieties. “Bitter” cassava generally contains much higher levels than “sweet” varieties.

Severe cyanide exposure can cause symptoms such as:

Cassava products such as properly processed tapioca are different from raw cassava because processing is designed to make them suitable for consumption.

What about cassava leaves?

Cassava leaves can also contain cyanogenic compounds and should not simply be treated like ordinary salad greens. Where cassava leaves are traditionally eaten, they are prepared using established methods designed to reduce these compounds.

The bigger picture

Cassava isn’t inherently a “deadly food.” It’s a useful carbohydrate source and provides nutrients including vitamin C and some fiber, although its nutritional profile varies by variety and preparation.
