- 4 medium potatoes
- 1½ cups shredded cheddar or mozzarella
- 2 tablespoons cornstarch

Method
- Prepare the potatoes:Â Peel and grate the potatoes. Place them in a clean kitchen towel and squeeze firmly to remove as much moisture as possible. This is the secret to getting them crispy.
- Make the mixture:Â Combine the potatoes with cheese, cornstarch, garlic powder, paprika, salt, pepper, and herbs. Mix until evenly combined.
- Shape it:Â Heat oil in a large oven-safe skillet. Spread the potato mixture into an even layer and press it down firmly.
- Get it golden: Cook over medium heat for about 5–7 minutes, until the bottom is deeply golden and crisp.
- Finish cooking: Transfer to a preheated 425°F (220°C) oven and bake for about 15–20 minutes, until the potatoes are cooked through and the cheese is bubbling.
- Extra-crispy finish: Broil for 1–2 minutes at the end if you want an especially golden, crunchy top—watch it closely.
- Serve:Â Let it rest for a few minutes, then cut into wedges or squares. Sprinkle with fresh herbs and serve immediately.
Pro tip:Â Don’t skip squeezing the grated potatoes dry. Too much moisture is the biggest enemy of that crunchy, golden crust.
